Cranberry Relish

Serves 6
Ingredients:
- 1 lb.Cranberries (frozen)
- ½ each, Orange peel zest & juice
- 1oz. fresh Ginger
- ½ each Vanilla Beans (or 1 tsp. vanilla extract)
- 1 each Cinnamon Sticks
- ½ cup Orange Juice
- ½ cup Sugar
Procedure:
- Place in non aluminum pot
- Simmer until thick (approximately 1 hour)
